Gajar Matar Salad
Serves 4
Cooking time (approximately): 5 minutes
~Ingredients
2 big carrots, chopped
1 cup green peas, shelled
1 big onion, finely chopped
1 green chilli, crushed with salt
A few mint leaves, chopped
Salt, pepper, lemon juice to taste
Fresh coriander to garnish
~Method
Boil the carrots and peas on medium/ low heat for about five minutes or till they are cooked but firm. Cool.
Add the chopped onion, chilli, mint leaves, salt, pepper and lemon juice. Mix well.
Garnish with finely chopped fresh coriander.
Serve cold.
Health counter: This particular dish is rich in Vitamin A (carrots) and Vitamin C (peas). It has high nutritional value and is ideal after a gruelling day at work or at school.
