Rajma Aloo Chat
Serves 4
Cooking time (approximately): 10 minutes
~Ingredients
4 potatoes, boiled, peeled, cubed
2 cups kidney beans, boiled
2 medium-sized onions, finely chopped
5-6 green chillies
1 tsp oil
Salt, pepper, lemon juice to taste
Fresh coriander for garnish
~Method
Heat the oil in a pan on a medium flame for 10 seconds. Add the onions and green chillies and cook for five minutes.
Add the potato cubes, kidney beans, salt, pepper and lemon juice. Cook on low heat for about three minutes.
Garnish with finely chopped fresh coriander. Serve at room temperature.
Health counter: The salad tastes great, is easy to digest and is rich in nutritional value. It is one of the best things you can get your kid to eat after a hard day at school. Since the salad makes minimum use of oil, it is low in fat as well.
