Salat-e-Aswad

Aswad means black in the local dialect of Arabic and the black is representative of the black/dark brinjal that is used in this dish.

Hence in Lebanon, aswad means brinjal. The salad is made of tomatoes and brinjal and garnished before it is served. It has a slightly tangy but very spicy taste and tomato lovers will like this dish very much.

Fatoush

This is a green salad made with lollo rosso and iceberg lettuce, two varieties of lettuces that could be used for dressing of the food. Taste-wise they are pretty much like regular lettuce.

It is normally sprinkled with limewater, salt and served with some crisp pieces of bread.

It has a very strong flavour because of the garlic and olive oil.

Iceberg lettuce leaves are added to tone down the taste a bit.
