Fhoulaish

Fhoulaish is a preparation made of fawa beans. 'Fhoul' refers to beans (broad beans) and 'aish' refers to the bread the dish is served with.

The beans are soaked overnight and then cooked in olive oil over a low flame.

Interestingly, these beans are eaten with bread in the same way that we consumepav-bhaji.

It is served by sprinkling some limejuice, chillies and salt (according to personal preferences), which gives it a very tangy and hot flavour. One of the spiciest of all the dishes on the table, this is my personal favourite.

As in the case of pav-bhaji, the bread is cut from the middle and is roasted on the gas, the way we would roast papad. The bread is served with the beans and the locals normally eat it with their hands.

Fawa beans are a part of the staple diet of the Lebanese people and they consume the beans throughout the day, be it breakfast, lunch or dinner.

The beans are served with lots of garnishes and would normally be a main course meal.
