Kosha Mangsho

Servings: 2

~Ingredients

400 grams mutton
2 tbsp mustard oil
2 cups sliced onion
2 tsp red chilly powder
6 tsp coriander or dhania powder
˝ tsp turmeric powder
Salt
5 grams whole garam masala
2 bay leaves
4 green cardamom or elaichi
4 cloves
1 stick cinnamon
1 tablespoon ginger-garlic paste

~Method

Heat mustard oil in a large pot or handi to smoking point. Temper the whole garam masala and bay leaf in the oil.

Add sliced onions and fry till golden brown. Add ginger-garlic paste and sauté. Add red chilly powder, coriander powder and turmeric dissolved in a little water. Sauté till masala separates from the oil.

Add mutton pieces and cook well on a high flame (bhuno), add salt. Add little water and cook till mutton is cooked and tender. Adjust the seasoning.

The consistency should be semi dry.
