Pineapple Pachadi

This dish is basically a pineapple raita.

~Ingredients

1 ½ cup fresh pineapple (chopped)
1 or 2 chopped green chillies
3 tbsp coconut
½ tsp mustard
1 cup fresh, thick curd (beaten)
1 or 2 red chillies
1 sprig of curry leaves
1 tbsp coconut oil

~ Method

Cook the pineapple with salt, green chillies and water (just enough to be completely absorbed by the pineapple).

Grind the coconut to a paste. When almost ground, add a little mustard and grind again.

Add the coconut paste and curd to the cooked pineapple while it is still hot.

Do not add any water as it should be a thick mixture. Do not cook it again.

Temper with mustard, red chillies and curry leaves and pour over the pachadi.

Want to make it sweet? Add a little sugar and a few fresh black grapes.
